75cl / 61% / Holmes Cay - Produced in Australia's oldest registered distillery, this molasses-based rum was distilled in a pot still and aged in the country for six years in American oak. It was then moved to the UK and matured for a further four years in an ex-bourbon cask. This has imparted notes of vanilla, mint tea, flint and green banana skins on the palate.
